Weekend Wrap Up: Late & Abbreviated Edition
On Friday night, I met the girls for dinner at The Wild Hare. On Saturday, I met Jaime for a hot 5 mile run. I actually got sunburned! Post-run, John & I grabbed some pizza at Pizza Perfect. I love that place so hard.
After lunch, I watched Heathers & painted my nails. Heathers was pretty.... very. I hadn't seen this movie in easily 20 years. It's held up well!
The Country Music Marathon was in Nashville on Saturday. On Saturday night, I met a lot of friends in town for the race for dinner at Flyte. I've been wanting to eat at Flyte for years. At the risk of giving Delaney a heart attack, I was honestly a little let down. I know, I know. The place was great, the service was great, the wine was great, but the food was... meh. Maybe I just ordered the wrong thing? I don't know. I wasn't knocked out. My wallet was though. Badabing!
Post our meh-dinner, we went for drinks at the Hutton Hotel. I love that place! This was my second time there & I really liked it. Good atmosphere, clearly since the couple across from us was making out on the couch the whole time.
I didn't have a lot to do on Sunday, so while John was cutting the grass & painting the mailbox, I made chocolate chip cookies, which I'm pretty sure we have finished off a mere 24 hours later....

Tortilla Espanola
I love breakfast for dinner & I've been squirreling away recipes as I come across them. This is one that I've been holding on to since last summer. I finally made it this week & it was really good. Until recently, I didn't know about these tortas/tortillas, but now I'm really into them. It's a good way to make bacon & eggs a hearty dinner.
TORTILLA ESPANOLA
Adapted from Crepes of Wrath
Serves 4
INGREDIENTS
8 slices thick cut bacon, diced
2 shallots, thinly sliced
2 small baking potatoes, peeled & thinly sliced
1/4 cup olive oil (more as needed)
salt & pepper, to taste
8 eggs, beaten
Tabasco, to taste
DIRECTIONS
Heat a teaspoon or two of olive oil in a large cast iron skillet over medium-high heat, & add in the diced bacon. Cook until the fast is rendered & the bacon is crispy, about 6-8 minutes. Remove the bacon from the skillet with a slotted spoon & place on a plate lined with paper towels. Set aside.
Add the thinly sliced shallots to the skillet so that they cook in the bacon fat. Cook over medium heat for 8-10 minutes, until almost caramelized. When ready, remove from the skillet & set aside. Drain the remaining bacon fat from the skillet & add 1/4 cup of olive oil. Add in the thinly sliced potatoes. Turn the heat up to medium-high & cook the potatoes in batches until golden & tender on each side. Be careful that they don't burn to the bottom.
Preheat the oven to 400 degrees. Reduce the heat to medium-low, add a little more olive oil & arrange the potatoes in a single layer in the skillet. Sprinkle the potatoes with salt & pepper, to taste. Arrange the shallots & bacon over the top, then whisk together the eggs & Tabasco & pour them over everything. Cook the eggs for 5 minutes over medium heat, until the bottom is set. Lift the potatoes up around the edges & in the middle so the egg can get underneath & cook evenly.
Place the skillet in the oven & bake for 5-8 minutes, until the top in mostly set. Remove from the oven & allow to sit for a few minutes, so that it sets completely & you can cut it without it falling apart. When ready, slice into big wedges & serve!
KIM'S NOTES
We loved this. I kept wanting to add cheese, but John wouldn't let me. Turns out, it didn't need cheese. First time I've been wrong about that. It does need a little side salad to go along with it though. I forgot that, so we basically just ate the whole thing. This dish is really good as-is, but I did scribble down some possible things to add in next time: diced green chiles, mushrooms, garlic, sriracha & salsa (as a topping).
This was easy & fast to make. Browning the potato slices in batches got a little tedious, but not too bad. I definitely recommend trying this recipe.

How To Make Lists In Twitter
It has come to my attention that most people either don't use Twitter, or set up accounts, but never log in. Twitter can be overwhelming if you don't know how to manage it, especially if, like me, you follow hundreds of people.
Awhile back, I was complaining about Twitter & how my feed is clogged up with Huffington Post & their gazillion subsidiaries when my friend Colby taught me how to make & use lists within Twitter. It took me an entire afternoon to set it up, but it's definitely changed my Twitter life.
I've tried to explain to a few friends how to set up these lists, but it seems easier to do it here where I can use visuals. Let's get started!
From the Twitter home page, click "View My Profile Page." This will take you to your Twitter profile, obvi. Under your picture, there should be a box that says, "Tweets", "Following", "Followers", "Favorites", "Lists" & "Recent Images". Click on "Lists".
This is what my Lists page looks like. I'm hoping the Lists option shows up even if you don't have any lists set up yet. If it doesn't, let me know.
The first thing you want to do is click "Create List". I recommend creating a list of people that you actually want to read. My list like this is called Read. I have another list called Friends. The difference is, Read includes anything I want to read, food trucks, news, etc, whereas Friends is just that, friends.
So give your list a name. Twitter gives you the option of adding a 100 character description, but I don't do that because all of my lists are private, so no one sees them but me. Speaking of, you definitely want your Read list marked Private. You don't need your various besties knowing that you don't read their tweets. Trust. Once you've given your new list a name & clicked "Private", click "Save List" & you're done! You just made your first list.
Once you click, "Save List", Twitter takes you to this page where you can find people to add to your list. I suggest adding everyone who think you want to read, then you can go back at any time & make adjustments. It's pretty easy to edit your lists once they're set up.
Once you have your first list set up, repeat this process as necessary depending on how many lists you want to create. I have 8 lists: Music, Read, Food, Celebs, News/Companies, Politics, Bloggers & Friends, but you may only want 1 Read/Friends list. Totally your call. Again, I recommend making your lists private. My Twitter account isn't private, but my lists are. I also recommend only adding people to 1 list. It gets tedious to constantly read the same tweets in different lists.
That's it! That wasn't so bad, right? The awesome thing is, if you check your Read list regularly from your iPhone, your phone will remember & automatically go to your Read list every time. Thanks, Apple!
One last general Twitter recommendation, I highly suggest putting a disclaimer on your profile page. You can do this by clicking "Edit Your Profile" & typing your disclaimer statement into the text box titled "Bio". My aforementioned friend Colby has my favorite disclaimer, "All opinions here are my own, but feel free to agree with them." Mine just says, "All views and opinions expressed here are my own and are not reflective of anything other than yours truly." I copied that from my friend Jenn. Regardless of how you say it, say it.
I hope this was helpful & I hope that these lists make Twitter a little more user friendly for some of you. I love Twitter & think it's great resource for information, you just have to know how to manage it.

Weekend Wrap Up: Peanut Butter S'mores Edition
On Friday, I met my friend Katie for dinner at Thai Star on Thompson Lane. John has been eating lunch there lately & I wanted to try it. It was good. Really good service. I'll definitely go back. After dinner, I painted my nails & started watching Season One of Game of Thrones. Whoa, that show is nuts! In a good way.
On Saturday, I went where I apparently go now on Saturdays, the mall. I had a bunch of random stuff to return & Jaime had more stuff to buy. Everything in LOFT was 40% off, so Jaime & I both bought this cute, little zippered tee. Then I got some much needed waterproof black eyeliner at Sephora & this awesome hair conditioner at Kiehl's.
On Saturday night, we met Dave & Alexis over at our friends' Keith & Nicole (not Urban's) house. Someone told Nicole about this better way to make s'mores using Reese's Peanut Butter Cups. They have a fire pit, so we bundled up & sat around the fire, drinking wine, eating snacks & roasting marshmallows. The peanut butter s'mores kind of changed my life. At some point, I forgo the actual process & just started pushing the peanut butter cups into the marshmallow & then cramming the whole marshmallow into my mouth. It was ridiculous & delicious.
On Sunday, we went over to Mary Katherine & Marshall's for Sunday Supper. Marshall offered to grill pizzas for us, so I brought a bottle of wine & made a chocolate ricotta pound cake (recipe here). The pizza was delicious. Mary Katherine shares my love of putting an egg on it, so Marshall cracked an egg over the pancetta pizza. So good! Marshall also had the brilliant idea of melting some nutella to drizzle over my pound cake. OMG! So good!

Losing My Luster
I digress. Like I do when I'm obsessed with something, I talk to EVERYONE about it. I was talking to my hair stylist because she's like 15 & gorgeous & always has good makeup. She told me about these YouTube videos by a London based makeup artist, Pixiwoo & recommended I watch them. OMG, y'all. These videos are CHANGING MY LIFE.
Pixiwoo is teaching me so much. Based on recent conversations with friends, I'm convinced no one knows how to apply eyeshadow, especially multiple colors. Pixiwoo is here to help. She shows how to properly use all the colors in a palette & how to blend them. It makes so much sense! And she tells you what products she's using. She tells you while she's doing it & then she lists the products on the page under the video, brushes & makeup. There are two things on my list right now thanks to Pixiwoo: 1) MAC Tempting & 2) Avon Supershock Gel Liner. Where do you even buy Avon?
I'm also realizing that wearing foundation may solve a lot of my lackluster problems, pun intended. I used to wear foundation, but I got lazy, quit wearing it & am having trouble working it back into my routine.
A friend turned me on to the blog, Into The Gloss. I love it. They interview people in the fashion industry & ask them what their favorite products are. Thanks to this post, I'm now convinced I need a Clarisonic & am saving my pennies to buy one.
So yeah, this is what I'm obsessing about right now & probably will continue to be for the next month. Thanks to all of my friends who are patiently answering my never-ending stream of questions about what concealer they wear & how often they use their Clarisonic.
Now, on to the Pixiwoo videos.
This is a video where she does a Friday night makeover on a friend (while drinking a pint). This is a good video for seeing how to blend multiple colors, as well as smoking up your look for night. Also note the use of the aforementioned Avon Supershock Gel Liner.
This video is Pixiwoo showing how to do Adele inspired makeup. As long as I live, I'll never master the liquid eyeliner cat-eye, but for those who can, this video is for you.

Weekend Wrap Up: Asheville Edition

FRIDAY
We drove to Asheville for our friend Heathen's wedding. Once there, we met our friends Mike & Amanda for dinner. I looked on Yelp for high rated restaurants close to our hotel & we went with a place called Papas and Beers. It's California style Mexican. We really liked it & apparently we're getting one in Nashville, though I don't know when or where.
SATURDAY
Per everyone in the world's recommendation, we went to Tupelo Honey Cafe for brunch & it was amazing. I ordered the fried egg BLT with goat cheese grits. Delish! While Mike & John went off to help get ready for the wedding, Amanda & I drove to downtown Asheville to see the sites. We sat at Lexington Ave Brewery for a long time people watching. We explored downtown a little while longer, then headed back for the wedding.
The wedding was outside at The North Carolina Arboretum. The weather was gorgeous for an outdoor wedding. We had a lot of fun. All of John's old college friends were there, so he had a blast. Plus, there was a photo booth. You can never go wrong with a photo booth.
SUNDAY
Pretty useless day. Lots of laying around & doing nothing. I did watch the movie 50/50, which was better than I expected.

Book Review: Awkward Moments With Men
My friend Shannon wrote a book & it's hilarious. I've never met her co-author, Megan, but having read the book, I feel like I know her. This book is a collection of essays about "what it is to love & lust as young women stammering through the perils of the modern world." Most of the essays are about dating, but Shannon is married, so some of them are about her husband. These chapters were fascinating to me because her husband is good friends with my husband. Don't worry, she doesn't over share, assuming you realize that couples copulate on their wedding night. Speaking of, that was one of my favorite chapters, "The Man On My Ice Bucket List". Here's the particular excerpt that made me laugh out loud:
"We're married," he cooed kissing me on the forehead.
I was definitely going to throw up. His freckles were making me dizzy & all I could think about was stuffed crust pizza.
Ha! I also loved the chapter, "The Man Who Adds Ten Pounds". See if this sounds familiar...
After three months of dating, I was finally treated to an expertly crafted dinner of chicken parts with my newly minted boyfriend, The Man Who Adds Ten Pounds. And simply because I hadn't done it in awhile & felt like being called pretty, I was complaining about the size of my pants. I knew I wasn't fat; sure I might have gone an Oreo or two past my daily bi-color cookie sandwich quota, but I was insecure & if I was told that my ass was the correct size & shape by somebody that loved me, I was confident that I would feel better.
Um, yes! I laughed a lot reading this book. Shannon & Megan's stories are entertaining without being raunchy. The writing is honest & good, which a lot of new writers aren't able to pull off. I've noticed a lot of new writers, especially humor writers, use way too many adjectives & analogies trying to appear as smart, established writers, which doesn't work & emphasizes how hard they're trying. Shannon & Megan write in a confident, straightforward fashion that lends you to believe that they've been writing books for years. Not to mention, it's grammatically correct, a big feat for a book independently published without the luxury of an editor.
I have so much admiration for these ladies. They did something most of us only daydream about. They had an idea, put pen to paper & then created a Kickstarter campaign to fund it. I forget how much money the ultimately raised, but it was an impressive amount. The last page of the book is a thank you & a list of everyone who contributed to their Kickstarter. I thought this was a gracious & classy way to close the book.
I loved this book & highly recommend it. You can borrow my copy, but I suggest buying the paperback version so you can pass it along to your friends when you're done. There's also a Kindle edition. Both available on Amazon.
Shannon & Megan, you're so awesome. Thank you for writing this book, thank you for the sweet shout-out in The Credits, & most importantly, thank you for showing me that this can be done.

FRIDAY
Friday was my first day off since Christmas. In news that should shock no one, I spent the whole day shopping. We're going to a wedding this weekend & I needed a dress. What? I needed one!
That afternoon I took Linda for her yearly vet appointment where I learned a few things, namely that Linda is full of buckshot. Translation: someone shot our dog. A lot. Who shoots dogs?! People in Pegram, that's who.
That night we met Mike & Amanda for dinner & then John & Mike practiced their musical parts for the wedding this weekend.
SATURDAY
I got up early on Saturday & ran the Richland Creek Run. It's a 5 mile race that I ran last year, as well. They changed the course this year & it was a lot better. It was gorgeous running weather & I found a fellow East Nasty to run with. It was my first non-sucky run since the half marathon. Maybe I'm back?
Post-race, I met MK for brunch, then ran a bunch of errands, including the very important errand of eating ice cream. Whatever, I ran 5 miles & didn't eat lunch. It balances out. For dinner, we met Jeff & Ashlee for Mexican where Ashlee echoed my suspicions that I have the early stages of plantar fascitis. It's always something....
SUNDAY
We went to my parents' house for Easter. My mom made a huge meal & my nieces did an Easter egg hunt. After they found all the eggs, Abigail, the oldest of the four, ordered all the adults inside, except me, while she re-hid all the eggs. It was hilarious. She took all this time hiding them, while unbeknownst to her, Jessica, the three year old, was going around behind her & picking them all up. Bless them.

Jalapeno Popper Pizza

I'm apparently going pizza crazy. Just last week I hit it out of the park with Erin's proscuitto, jalapeno, goat cheese pizza. You'd think I'd be satisfied; that my pizza itch had been scratched. You'd be wrong. It just awakened my inner pizza monster. So off to the interwebs I went, searching for more pizza recipes. I found this one on TasteSpotting. It had me at cream cheese.
JALAPENO POPPER PIZZA
Adapted from Heather Christo Cooks
Serves 4-ish
INGREDIENTS
Pizza dough
Olive oil
Cornstarch
8 oz cream cheese, softened
1 large jalapeno, thinly sliced
1 shallot, thinly sliced
6 slices bacon, cooked to crispy
1 egg, optional (but HEAVILY suggested)
DIRECTIONS
Shape the dough into a ball. Place it in an olive oiled bowl, cover with plastic wrap, & let rest at room temperature for 30 minutes.
On a lightly floured surface, pressing down with floured fingertips, shape the dough into a small, flat disk. Working from the center, push the dough outward while spreading your fingers, making the disk larger. Pick up the dough. Move your hands along the edges, allowing gravity to pull the dough into a 14-inch circle.
Preheat the oven to 425 degrees. Preheat your pizza stone with the oven. Sprinkle the pizza stone with cornmeal & place the dough on the stone. Brush the dough with 1 tbsp olive oil & bake until golden & crispy, 5-7 minutes.
Spread the cream cheese evenly over the pizza.
In a small dish, combine the jalapeno & shallot with 1 tsp of olive oil, then sprinkle over the cream cheese. Add the bacon & bake another 5 minutes, or until the cream cheese is hot & golden & the jalapenos & shallots are softened.
Let cool for 1-2 minutes, then slice & serve!
KIM'S NOTES
This pizza was so good! I think I like it slightly better than last week's pizza. The only problem is that I forgot to let the cream cheese soften, so I couldn't really spread it on the pizza & ended up cutting it into chunks & then the chunks wouldn't melt & the crust was starting to burn. Oy. Make sure to use room temp cream cheese. Trust.
Okay, let's talk left-overs. There are people who put a ring on it, there are people who put a bird on it & then there's me. I put an egg on it. OMG y'all! This reheated pizza topped with a fried egg BLEW MY MIND. If I weren't so lazy & already in my pajamas (at 4pm), I'd go to the store & buy the ingredients to make this again tonight. I'm totes serious.
Make this pizza! Put an egg on it! You're welcome.

FRIDAY
I've been neglecting yoga for the past few months. It was hard to work it in while I was training for the half, but it's time to get back into it. I thought I'd try Sanctuary's new space in Green Hills. I looked online & saw that Brent Coleman had a Friday night class. Sold! Brent taught a free class at lululemon last fall & I really liked it. I invited my friend Jenn to go with me, so we met, we yogi-ed & then we ate dinner at Pei Wei.
I like Sanctuary's new space. It was easy to get in to, easy to park, no traffic, assuredly because it was Friday night, but still. It's good. And I loved Brent's class. I like his teaching style. He walks around & adjusts your poses & pushes you, which I need. Also, and this is completely irrelevant, but he plays good music. This may be my new Friday night routine.
SATURDAY
I went to brunch with Jessica on Saturday. We tried Mad Donna's for the first time & loved it. We both had pomegranate mimosas - so good! While on the East Side, I stopped into Old Made Good looking for this vintage cake tin that they had on Instagram a week or so ago. Success! My mom has one of my great-grandmothers cake tins & this is just like it.
Spurred by my shopping success at Old Made Good, I headed to The Gulch to look for shoes, which I found at Urban Outfitters, on sale for $39 no less! Then I went to the mall to grab a couple of things I forgot to get while I was there last weekend.
John had to work on Saturday night, so we grabbed dinner at Royal Thai. After dinner, John went back to work & I watched two more episodes of Homeland.
SUNDAY
Yesterday, Jaime, Cara & I ran together again for the first time since Tom King. For those of you who don't live in Tennessee, it's basically summer here right now, temps in the high 80's. We ran a hot, slow 4 miles, which almost killed us. It's very humbling to have run 13+ miles fairly effortlessly a few weeks ago & to now be barely able to finish 3-4. This weather is KILLING ME.
