LEMON BARS
Yields 24 bars
Crust
2 cups all-purpose flour
1 cup confectioner's sugar
Pinch of salt
1 cup (2 sticks) butter, at room temp
Filling
4 eggs
2 cups granulated sugar
6 tablespoons all-purpose flour
6 tablespoons fresh lemon juice
Preheat the oven to 350 degrees. Lightly grease a 13 x 9 x 2-inch pan. Make the crust: Combine the flour, confectioner's sugar, & salt in a large bowl. Cut in the butter to make a crumbly mixture. Press the mixture into the prepared pan. You may need to dip your fingers into a little flour or confectioner's sugar to keep the dough from sticking to your fingers. Bake for 20 minutes. Meanwhile, make the filling: Mix the eggs, granulated sugar, flour, & lemon juice. Pour this over the baked crust & bake for 25 minutes longer. Sprinkle with confectioner's sugar, if desired, when the bars are done.

here's the lemon bar recipe that i usually use - it's got less butter and sugar than paula's:
http://allrecipes.com/Recipe/Annemaries-Lemon-Bars/Detail.aspx (i usually use more lemon juice too).
i've noticed lately when i see photos of Paula Dean....her and Tara Reid kind of look alike...you know, in a drunk, titty-showin, younger version kind of way.
